The first mention of this elixir goes back as far as 1046. To produce Tradizionale, red Lambrusco and white Trebbiano grapes, exclusively from Emilia Romagna, are reduced to approximately a third on an open fire. The lengthy ripening period (Vecchio at least 12 years, Extra Vecchio at least 25 years) is spent in the “Mosto cotto” in wooden barrels. The end result is around 1 litre of Tradizionale from 75 kilograms of grapes.The company was founded in 1891 by Adriano Grosoli and is now being run by the fourth generation with a great love of tradition.

Aceto Balsamico del Duca di Adriano Grosoli s.r.l is based in Modena and belongs to the Aceto Balsamico di Modena association.

The association monitors production and ensures proper production, ageing and maturing methods, and also that the Aceto Balsamico claim is correct. Del Duca has been granted PGI (Protected Geographical Indication) status.
